Spicy Chicken Satay with Homer Hot Sauce

Ingredients:
For the marinade:

1 ½ lbs (680g) boneless, skinless chicken thighs or breasts, cut into thin strips

2 tablespoons soy sauce

2 tablespoons coconut milk

1 tablespoon brown sugar

¼ cup Homer Hot Sauce (adjust to taste)

1 teaspoon turmeric powder

1 teaspoon ground coriander

1 clove garlic, minced

½ teaspoon salt

Juice of ½ lime
For the peanut dipping sauce:

½ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon rice vinegar or lime juice

2 tablespoon Homer Hot Sauce (more if you like extra heat!)

⅓ cup warm water (add more for desired consistency)

Instructions:

Marinate the Chicken:
In a large bowl, whisk together soy sauce, coconut milk, brown sugar, Homer Hot Sauce, turmeric, coriander, minced garlic, salt, and lime juice.
Add chicken strips, toss well, and marinate for at least 30 minutes (preferably 2 hours or overnight in the fridge). -
Make the Peanut Sauce:
In a small bowl, mix peanut butter, soy sauce, brown sugar, rice vinegar/lime juice, Homer Hot Sauce, and warm water until smooth and creamy. Set aside. -
Grill or Cook the Chicken:
