Baby Back and Pork Spare Ribs

 

 

First:

  1. First set your smoker to 180 degree and while it's heating up prepare your ribs.
  2. Remove the Silverskin from the bone (lots of good tutorials on YT)
  3. Coat your ribs with a homemade rub
Rub Ingredients:
  1. 1/4 cup brown sugar
  2. 2 teaspoons kosher salt
  3. 2 teaspoons black pepper
  4. 2 teaspoons smoked paprika
  5. 1 teaspoon garlic powder
  6. 1 teaspoon onion powder
  7. 1 teaspoon ground mustard
  8. 1/2 teaspoon cinnamon
  9. 1/2 teaspoon celery salt


    Instructions:

    1. Really rub that into the ribs, don't just sprinkle it on top!
    2. For Baby back ribs, smoke for an hour at 180, then an hour at 225. BONE DOWN
    3. For country ribs, an hour at 180 then 2 hours at 225. BONE DOWN
    4. Each hour baste the ribs with Homer Hot Habanero snap sauce.
    5. At the 2 hour (or 3 hour) mark move the ribs to tinfoil. At this point I like to really slather the ribs in a mix of Homer Hot Habanero Snap and sweet baby rays bbq sauce 2:1 mix (bbq on the 2) wrap the foil TIGHT, and cook at 225 for 2 hours BONE UP.
    6. After 2 hours, open up the foil, give a final slather of BBQ sauce and Homer Hot and left cook at 225 for 1 hour.
    7. In total you should be looking at 6-7 hours for the best ribs of your life!!!
