Baby Back and Pork Spare Ribs
First:
- First set your smoker to 180 degree and while it's heating up prepare your ribs.
- Remove the Silverskin from the bone (lots of good tutorials on YT)
- Coat your ribs with a homemade rub
- 1/4 cup brown sugar
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground mustard
- 1/2 teaspoon cinnamon
- 1/2 teaspoon celery salt
Instructions:
- Really rub that into the ribs, don't just sprinkle it on top!
- For Baby back ribs, smoke for an hour at 180, then an hour at 225. BONE DOWN
- For country ribs, an hour at 180 then 2 hours at 225. BONE DOWN
- Each hour baste the ribs with Homer Hot Habanero snap sauce.
- At the 2 hour (or 3 hour) mark move the ribs to tinfoil. At this point I like to really slather the ribs in a mix of Homer Hot Habanero Snap and sweet baby rays bbq sauce 2:1 mix (bbq on the 2) wrap the foil TIGHT, and cook at 225 for 2 hours BONE UP.
- After 2 hours, open up the foil, give a final slather of BBQ sauce and Homer Hot and left cook at 225 for 1 hour.
- In total you should be looking at 6-7 hours for the best ribs of your life!!!
