Spicy Habanero Chicken Tacos
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup Homer Hot Habanero Snap Hot Sauce
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 cup crumbled queso fresco or feta cheese
- Lime wedges for serving
Instructions:
Prepare the Chicken:
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Rub the spice mixture all over the chicken breasts.
Cook the Chicken:
- Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove from the oven and let rest for 5 minutes before slicing into thin strips.
Warm the Tortillas:
- While the chicken is baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until lightly toasted and pliable.
- Keep them warm in a clean kitchen towel.
Assemble the Tacos:
- Place a few slices of the cooked chicken in each tortilla.
- Drizzle with Homer Hot Habanero Snap Hot Sauce to taste.
- Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and crumbled queso fresco or feta cheese.
Serve:
- Serve the tacos with lime wedges on the side for squeezing over the top.
