Spicy Habanero Chicken Tacos

 

 

Ingredients:

  1. 1 lb boneless, skinless chicken breasts
  2. 2 tablespoons olive oil
  3. 1 teaspoon ground cumin
  4. 1 teaspoon smoked paprika
  5. 1 teaspoon garlic powder
  6. 1 teaspoon onion powder
  7. Salt and pepper to taste
  8. 1/4 cup Homer Hot Habanero Snap Hot Sauce
  9. 8 small corn or flour tortillas
  10. 1 cup shredded lettuce
  11. 1/2 cup diced tomatoes
  12. 1/4 cup diced red onion
  13. 1/4 cup chopped cilantro
  14. 1/2 cup crumbled queso fresco or feta cheese
  15. Lime wedges for serving

 

Instructions:

Prepare the Chicken:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture all over the chicken breasts.

 

Cook the Chicken:

  1. Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
  3. Remove from the oven and let rest for 5 minutes before slicing into thin strips.

 

Warm the Tortillas:

  • While the chicken is baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until lightly toasted and pliable.
  • Keep them warm in a clean kitchen towel.

 

Assemble the Tacos:

  1. Place a few slices of the cooked chicken in each tortilla.
  2. Drizzle with Homer Hot Habanero Snap Hot Sauce to taste.
  3. Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and crumbled queso fresco or feta cheese.

 

Serve:

  1. Serve the tacos with lime wedges on the side for squeezing over the top.
