The holidays are a time to gather, celebrate, and, of course, feast! This year, why not add a fiery twist to your traditional roast turkey with our Spicy Roast Turkey recipe? With the addition of Homer Hot Sauce, this dish combines bold flavors and just the right amount of heat to delight your taste buds and impress your guests.

Ingredients

  • 1 - 1 ½ cups mayonnaise
  • 2 tablespoons paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • ¼  cup Homer Hot Sauce
  • 1 (14 lb) turkey

Directions

Step 1: Prepare the Spicy Mayo Marinade

In a mixing bowl, combine mayonnaise with paprika, cayenne pepper, black pepper, salt, onion powder, oregano, thyme, and garlic powder. Stir until smooth. For an extra kick of heat and a burst of tangy flavor, mix in ¼  cup of Homer Hot Sauce. This secret ingredient adds a depth of flavor that perfectly balances the spices.

Step 2: Season the Turkey

Tuck back the wings of the turkey to keep them out of the way during roasting. Generously slather the spicy mayo mixture all over the bird, ensuring every crevice is coated. Massage the marinade into the turkey, including inside the cavity and under the breast skin, for maximum flavor infusion.

Step 3: Roast at High Heat

Place the turkey on the lowest rack of your oven and roast at 500°F for 30 minutes. The high heat helps seal in the juices and kickstarts the caramelization process for a beautiful golden-brown finish.

Step 4: Protect the Breast Meat

Remove the turkey from the oven and carefully cover the breast meat with a double layer of heavy-duty aluminum foil folded into a triangle. Leave the legs and dark meat uncovered. Insert a meat thermometer into the thickest part of the breast for precise cooking.

Step 5: Lower the Heat and Continue Roasting

Reduce the oven temperature to 350°F and roast the turkey until the internal temperature of the breast reaches 161°F. For a 14 to 16-pound bird, this should take a total of 2 to 2 ½ hours of roasting.

Step 6: Rest and Carve

Once fully cooked, remove the turkey from the oven and let it rest, loosely covered, for at least 15 minutes. This allows the juices to be redistributed, ensuring a moist and flavorful turkey.

Serving Suggestions

Carve the turkey and serve alongside your favorite holiday sides. Drizzle a little extra Homer Hot Sauce over the slices for a bold finishing touch that will have your guests reaching for seconds.
